Ini hasil karya si adek ikut baking class online dari outschool.com , kelasnya jam 9an malam ngikutin negara penyelenggara yang lagi breakfast dan ini termasuk makanan breakfast. Cuman emang agak susah cari blackberrynya, tapi bisa diganti strawberry.
Ini muffinnya lembut banget, gulanya bisa dikurangi sesuai selera
Blackberry Muffin with Crumble

Bahan
Crumble Ingredients
● ½ cups sugar
● ⅓ cups all-purpose flour
● ¼ cups butter melted
● 1 tsp ground cinnamon
● ½ t ground cardamom, opt.
Muffin Ingredients
● 2 cups all-purpose flour
● ¾ cup sugar
● ½ tsp salt
● 2 tsp baking powder
● ½ cup (8tbsp) room temp butter
● 1 egg
● 1 tsp vanilla extract
● ¼ tsp almond extract, optional
● ½ cups milk
● 1 cup fresh blackberries/strawberry or frozen
Caranya
MUFFIN
In MEDIUM bowl:
Combine dry ingredients together
● 2 cups all-purpose flour
● ¾ cup sugar
● ½ tsp salt
● 2 tsp baking powder
In LARGE mixer bowl: cream butter and
sugar together until light and fluffy
(about 2 minutes at med-high speed)
● 1 stick butter (½ cup) room temp.
● ¾ cup granulated sugar
Add the egg and mix until well combined
● 1 egg
Add 1 tsp vanilla extract & mix in
Add HALF of the dry ingredient mixture and beat until just combined about 10-15 seconds – do not over mix
Add ½ cup of milk and beat until just combined about 10-15 seconds – do not overmix
Add the rest of the dry ingredients to the mix and beat 10-15 seconds.
Dust the blackberries in 2 tbsp of flour & then fold them into the muffin batter.
Scoop batter into 12 regular sized muffin cups.
TOPPING DIRECTIONS
In the SMALL bowl:
Melt ¼ cup butter, if needed
Mix topping ingredients in a small bowl using
the fork & sprinkle over the muffins..
● ½ cups sugar
● ⅓ cups all-purpose flour
● ¼ cups butter melted
● 1 tsp ground cinnamon
● ½ t ground cardamom, opt.
Bake muffins for 20-25 minutes or until a toothpick or knife comes out clean.
